Noodle Shimizuya Ltd. is a noodle factory located in Kamioka-cho, Hida City, Gifu Prefecture, founded in 1948 (Showa 23). For four generations, we have been manufacturing noodles for commercial use as well as noodles that are loved by the local community, with a focus on flour and water, and a basic philosophy of ``making safe, secure, and delicious noodles.'' In particular, we mainly produce the thin curly noodles that are characteristic of Hida Takayama Ramen, a local ramen in the Hida region, and we offer flavorful Chinese noodles that are slow to boil.
