The Hyogo Prefecture Hand-rolled Somen Cooperative Association was established in 1887 (Meiji 20) and is a business cooperative headquartered in Tatsuno City, Hyogo Prefecture. The association is made up of approximately 400 members, and includes the producers of the hand-stretched somen noodles ``Ibo no Ito.'' The cooperative purchases raw materials, manages and sells products, and the cooperative members are in charge of producing the products. Ibonoito is known for its high-quality somen, made using carefully selected wheat and Ako salt, using a 600-year-old traditional hand-stretching method.
