Ochoa's Queseria, operating under the brand name Don Froylan Creamery, specializes in traditional Mexican cheeses such as Queso Fresco, Queso Oaxaca, and Queso Cotija. Founded in the late 1990s by Froylan and Zoila Ochoa after relocating to Oregon, the family began making cheese in their home kitchen due to the lack of authentic Mexican cheese in the area. Following Froylan's passing in the early 2000s, the family fulfilled his dream by opening a commercial creamery in 2003. Today, led by cheesemaker Francisco Ochoa, the company continues to handcraft high-quality cheeses using milk from local dairies, operating a cheese-making facility and shop in Salem, Oregon.
