In 2004, a young Sicilian named Giorgio arrived in Australia, without a word of English but a bold dream to bring a taste of Italy to his new home. His passion for cheesemaking was born from a desire to create an endless amount of uniquely Italian products from only one ingredient, milk. Starting out as a solo cheesemaker, supplying some of the city’s favourite restaurants, Giorgio quickly garnered a reputation for producing the finest, authentic Italian-style cheeses around.
