The California Olive Committee represents hundreds of family farms and two multi-generational canneries that grow and process over 50,000 tons of olives annually. California produces more than 95% of the olives grown in the United States, with groves ranging from small 5-acre lots to expansive 1,000-acre farms. The committee supports the industry's growers and processors by promoting the unique qualities of California Ripe Olives, which are produced using a traditional curing method that ensures a distinct flavor.
